Frozen Chocolate Strawberry Kiwi Pops

     There are certain things that just go together.  Strawberries and kiwi are one of them.  When I saw this post by ShowFood Chef, my first thought was how do I get a strawberry on that.  Well, that was easy, just freeze the slices!  This is a kid friendly recipe; not a lot of cook time, just a ton of waiting.  Pretty sure that we will be making these frequently this summer.

      You only need 4 ingredients, kiwis, strawberries, coconut oil, and the chocolate of your choice.  The change I made to the original recipe involves more steps and one additional ingredient.

When you are slicing the kiwis also slice up the strawberries and freeze in a single layer. Once the kiwi pops are dipped in the chocolate and coconut oil mixture place them back in the freezer.  After ten minutes remove them and the frozen strawberry slices.  Reheat the chocolate mixture if necessary.  Dip the strawberry slices in the chocolate mixture and then place on a chocolate covered kiwi pop.  Place them back in the freezer for another 5 minutes, then dip the entire pop one last time to seal the strawberry on the pop.
