Eating For Fuel and Health

     For the past couple of months food has often been a source of fear for me.  Always reading and questioning if the food contains gluten.  I don’t want to fear my food.  I want to enjoy it and have confidence that it will fuel my body not hurt it.  Thus I began researching a different way to eat and came across the Paleo diet.
     Now, Paleo is a lifestyle that I heard of before and dismissed it.  Who really wants to give up gluten unless they have to?  I dismissed it because it seemed so extreme and expensive.  Well our income has not changed, yet Paleo is attainable for us.  As for being extreme, Paleo is being dairy free, grain free, legume free, and sugar free.  That is extreme to many people.  For someone who already avoid dairy and all grains except rice, it isn’t too much of a leap.  To kick start Paleo eating, I am participating in a Whole30 challenge.
     What can I eat?  Meats, vegetables, and fruits.  Pictured above was my lunch, a Paleo Sweet Potato Hash.  It was very yummy and filling!  A typical breakfast for me is usually an egg of some sort, a breakfast salad (yes, I like salad in the morning), and 1/2 a grapefruit or 1/2 a banana.  Lunch is usually leftover meat from the night before with a large salad.  Dinner consists of meat (beef, chicken, pork, or fish), two vegetables, and a salad.  For snacks I have almonds and fruit.  As always, water is my drink of choice.
     Thus far, I have lost 4.6lbs on the Whole30 challenge and it has only been 1 week.  I’m really excited that my moving weight gain (7lbs) is disappearing.  What changes have you made to your diet lately?

    My weight has crept up over the past couple of weeks too. I've considered the Paleo Diet a lot. That's a big loss this week!

    I know what you mean about being 'scared' of your food.., I feel if I get too much of the 'bad' food, I won't be able to stay way. Maybe trying the Paleo Diet might work for me – I can't wait to hear more about your 30 day challenge.

    Mmmm… I love sweet potatoes. In our house we always get into the yam v. sweet potato debate – but we are farmers! Lol

    My food challenge is to see how much I can make or grow myself or buy from our valley. I prep my own from scratch mixes and am going into fermentation. I like knowing what is in my food.

    Sounds like this is working well for you. Wish I could share some of my extra eggs with ya!
